Salmon, Bell Pepper, and Zucchini Skewers Recipe

Ingredients: 

  • 3 tbsp olive oil
  • 2 pinches ground black pepper
  • 2 pinches salt
  • 1 small zucchini, sliced
  • 170g/6oz salmon filet, raw
  • 1½ tbsp lemon juice
  • 1 large bell pepper, chopped
  • 1 tbsp fresh parsley, chopped
  • 4 leaves fresh basil
  • 1 pinch garlic powder
  • 1 pinch smoked paprika

Instructions: 

  1. Cut salmon into approximately 1in/2.5cm wide pieces. 
  2. Combine salmon pieces, zucchini slices, and bell pepper pieces with olive oil, salt, ground black pepper, smoked paprika, and garlic powder, or use your favorite spices instead. 
  3. Thread salmon, bell pepper, and zucchini onto each skewer. 
  4. Preheat the grill or a grill pan to medium-high heat. Place skewers and cook for 6–8 minutes on each side or until the salmon flakes easily and the vegetables are nicely browned.
  5. Serve salmon skewers on a plate. Drizzle with lemon juice, top with basil and parsley, and enjoy!
