Salmon, Bell Pepper, and Avocado Salad Recipe

Both are packed with healthy fats, creating a keto meal that’s low in carbs and tasty when served with bell peppers, tomatoes, and arugula leaves. 

Ingredients:

  • 2.8oz/80g salmon filet, smoked
  • 1 small bell pepper, sliced
  • 1 small avocado, sliced
  • 1½ tbsp olive oil
  • 1 cup arugula leaves
  • 1 pinch ground black pepper
  • 2 tsp lemon juice
  • 4 medium cherry tomatoes, halved
  • 1 tbsp fresh parsley, chopped
  • 1 pinch salt

Instructions:

  1. In a small bowl, mix together olive oil, lemon juice, parsley, salt, and ground black pepper. 
  2. Assemble arugula leaves, smoked salmon slices, bell pepper, avocado, and cherry tomatoes on a plate. Drizzle with the dressing. Enjoy!
