Ingredients:

  • ¼ small onion, chopped
  • 1 small avocado, chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 115g/4oz salmon filet, raw
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 cup arugula leaves
  • 2 tbsp fresh cilantro, chopped

Instructions: 

  1. Season salmon with a pinch of salt and a pinch of ground black pepper. 
  2. Heat olive oil in a frying pan over medium heat. Add seasoned salmon to the pan and fry for 4–5 minutes on each side until the salmon is nicely browned. Salmon is done when it flakes easily with a fork. 
  3. Meanwhile, in a small bowl, mix together avocado, lemon juice, red onion, ground black pepper, salt, and fresh cilantro. 
  4. Serve the salmon on a plate and top with the avocado salsa. Garnish with arugula leaves. Enjoy!
