Salad With Chicken and Peanuts Recipe

Change it up a bit by serving your salt and pepper seasoned fried chicken pieces on a bed of fresh spinach and chopped cucumber, topped with peanuts.

Ingredients: 

  • 1 small cucumber, sliced
  • 1½ cup spinach
  • 3 tbsp unsalted peanuts, chopped
  • 2 tbsp olive oil
  • 2 pinches salt
  • 1 tbsp lemon juice
  • 80g/2.8oz chicken breast, raw
  • 2 pinches ground black pepper

Instructions: 

  1. Season the chicken with salt and ground black pepper.
  2. Heat half the amount of olive oil in a pan over medium heat. Add the chicken breast to the pan and cook for about 5 minutes on each side or until cooked through. Remove the chicken breast from the pan and slice it into bite-size pieces.
  3. On a plate, combine the chicken with cucumber slices, spinach leaves, and peanuts. Drizzle with the remaining olive oil and lemon juice. Serve and enjoy!

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
