Roasted Parmesan Cauliflower With Yogurt Sauce Recipe

With the crunchiness of the parmesan and the creaminess of the yogurt sauce, there is no better pairing than this!

Ingredients: 

  • 1 small cauliflower, in florets
  • ½ cup parmesan cheese, grated 
  • 2½ tbsp olive oil 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 2 pinches smoked paprika 
  • 1 clove garlic, minced 
  • 1½ tbsp lemon juice
  • 3 tbsp Greek yogurt, 4% fat 
  • 2 pinches garlic powder 
  • 1 tbsp fresh parsley, chopped

Instructions: 

  1. Preheat the oven to 425°F/220°C.
  2. Season cauliflower florets with a pinch of salt, ground black pepper, smoked paprika, and garlic powder. Drizzle with olive oil and sprinkle with parmesan cheese.
  3. Line a baking sheet with parchment paper and place the cauliflower in a single layer. Roast for 15 minutes or until it reaches your desired crispness.
  4. Meanwhile, mix Greek yogurt with lemon juice and minced garlic. Season with salt and ground black pepper to taste, and mix in half of the chopped parsley.
  5. Serve roasted cauliflower in a bowl with the yogurt sauce on the side. Top with remaining chopped parsley. Enjoy!

*NOTE: feel free to use frozen cauliflower.
