Roasted Beef Tenderloin Recipe

You can add some veggies or cauliflower rice as a side dish for a more balanced meal.

For the entire recipe, 4 servings, you’ll need:

  • 1lb/450g beef tenderloin
  • Salt and ground black pepper, to taste
  • 1 tsp white pepper
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 4 tbsp thyme

Instructions: 

The day before the roast:

  1. Use butcher’s twine and tie the tenderloin at 1-inch/2.5cm intervals. 
  2. Season with salt, pepper, and white pepper. 
  3. Transfer to a wire rack that’s been previously foiled.
  4. Refrigerate uncovered and let it rest overnight. 

The day when you are going to cook it:

  1. Preheat the oven to 225°F/107°C. 
  2. Place a baking sheet with the tenderloin in the oven and cook for 2–3 hours. 
  3. Remove from the oven and let it rest for 10 minutes. Make sure to remove the twine. 
  4. Set the oven to high – 450°F/230°C. 
  5. In a skillet, place the butter on medium heat. Cook the butter until it turns golden brown. Add the thyme and stir. 
  6. Place the tenderloin on top and pour some of the butter mixture on top of the tenderloin until it is coated. 
  7. Cook the tenderloin for 3–4 minutes on each side. 
  8. Remove the tenderloin from the pan and place it in the oven. Cook it in the oven for another 5 minutes.
