Ingredients:

  • 1 cup raspberries
  • ¼ cup heavy cream
  • ¼ cup water
  • Monk fruit sweetener, to taste
  • 1 tsp vanilla extract
  • ¼ tsp xanthan gum
  • ½ cup full-fat cottage cheese

How to prepare:

  1. In a small saucepan, combine the raspberries, heavy cream, water, monk fruit sweetener, and vanilla extract to begin making your keto breakfast without eggs.
  2. Heat over medium heat, stirring occasionally until the mixture comes to a boil.
  3. Reduce the heat to low and simmer for 5 minutes.
  4. Remove from heat and add the xanthan gum, whisking until completely dissolved.
  5. Place the cottage cheese in a food processor or blender and pulse until smooth.
  6. Add the raspberry mixture and blend until combined.
  7. Divide between 4 bowls and refrigerate for at least 30 minutes before serving.
