Ingredients: 

  • 3 cloves garlic, minced
  • 2 pinches salt and pepper
  • ½ medium zucchini
  • 120g/4.2oz beef filet, raw 
  • 2 tbsp olive oil
  • 2 cups beef broth
  • ¼ small red onion, sliced
  • 1 ½ tbsp lemon juice
  • 2 tbsp fresh cilantro, chopped
  • ⅓ medium red chili pepper, chopped
  • 4 leaves fresh basil

Instructions:

  1. Cut the zucchini into thin, noodle-like strips, or use a vegetable spiralizer.
  2. Slice the beef filet into thin slices. 
  3. Heat the olive oil in a heavy pot. Add the beef filet slices and season with a pinch of salt and ground black pepper. Cook for 1–2 minutes, until lightly browned. Remove from the pot and set aside. 
  4. Add the garlic to the same pot and cook for about 30 seconds. Pour the beef broth into the pot and bring it to a boil. Adjust the soup consistency by adding more boiling broth or water if needed. 
  5. Add the zucchini noodles to the pot and reduce the heat to medium-low. Cook for a few minutes, until tender. 
  6. Add the beef back to the pot. Season the soup with a pinch of salt and ground black pepper, and drizzle the lemon juice. Cook for 1–2 minutes.
  7. Serve the soup in a bowl and garnish it with cilantro, basil, red onion, and red chili pepper (optional). Enjoy!
