Ramen with zucchini noodles and beef is a delicious and keto-friendly twist on the classic Japanese dish. It is a perfect alternative to traditional ramen noodles.
Ingredients:
- 3 cloves garlic, minced
- 2 pinches salt and pepper
- ½ medium zucchini
- 120g/4.2oz beef filet, raw
- 2 tbsp olive oil
- 2 cups beef broth
- ¼ small red onion, sliced
- 1 ½ tbsp lemon juice
- 2 tbsp fresh cilantro, chopped
- ⅓ medium red chili pepper, chopped
- 4 leaves fresh basil

Instructions:
- Cut the zucchini into thin, noodle-like strips, or use a vegetable spiralizer.
- Slice the beef filet into thin slices.
- Heat the olive oil in a heavy pot. Add the beef filet slices and season with a pinch of salt and ground black pepper. Cook for 1–2 minutes, until lightly browned. Remove from the pot and set aside.
- Add the garlic to the same pot and cook for about 30 seconds. Pour the beef broth into the pot and bring it to a boil. Adjust the soup consistency by adding more boiling broth or water if needed.
- Add the zucchini noodles to the pot and reduce the heat to medium-low. Cook for a few minutes, until tender.
- Add the beef back to the pot. Season the soup with a pinch of salt and ground black pepper, and drizzle the lemon juice. Cook for 1–2 minutes.
- Serve the soup in a bowl and garnish it with cilantro, basil, red onion, and red chili pepper (optional). Enjoy!
