Pork Chop With Veggies Recipe

Pork chops grilled to perfection on a hot grill, served with salad or a selection of your favorite low-carb veggies makes a comforting, keto-friendly meal that’s hard to resist.

Ingredients: 

  • 100g/3.5oz pork chop, raw
  • ½ small tomato, sliced
  • ½ cup lettuce, chopped
  • ½ cup cucumber, sliced
  • ½ small bell pepper, sliced
  • ¼ small red onion, sliced
  • 2 tbsp thyme, fresh, chopped
  • 2 tbsp fresh dill, chopped
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 2 tbsp olive oil

Instructions: 

  1. Marinate the pork chop with half of the olive oil, a pinch of salt, and ground black pepper.
  2. Heat a grill or a grill pan to medium-high heat. Place the pork on the grill and cook for 7–8 minutes. Flip over and cook for an additional 7–8 minutes or until cooked through.
  3. In a bowl, assemble the chopped lettuce, sliced vegetables, and chopped dill. Drizzle with the remaining olive oil, sprinkle with a pinch of salt, and ground black pepper. Mix everything well.
  4. Serve grilled pork on a plate with vegetable salad and fresh thyme. Enjoy!
