Pork Chop With Asparagus and Tomatoes Recipe

Dig into simply seasoned pork chops served with al dente asparagus spears and cherry tomatoes, drizzled with zesty lemon juice.

Ingredients: 

  • 6 medium asparagus, spears
  • 2 tbsp olive oil
  • 2 pinches salt
  • 2 pinches ground black pepper
  • ½ tbsp lemon juice
  • 1 cup cherry tomato, halved
  • 4 leaves basil, fresh
  • 110g/3.9oz pork chop, raw

Instructions: 

  1. Rub the pork chop with half of the olive oil, a pinch of salt, and ground black pepper.
  2. Preheat a grill or a grill pan to medium-high heat. Place the pork chop on the grill and cook for 5–6 minutes. Flip over and cook for an additional 5–6 minutes or until cooked through.
  3. Meanwhile, heat the remaining olive oil in a frying pan over medium heat. Add asparagus and fry for about 4–5 minutes, then add cherry tomatoes and fry for 2 minutes more.
  4. Assemble asparagus, cherry tomatoes, pork chop, and basil leaves on a plate. Drizzle with lemon juice and season with salt and ground black pepper. Enjoy!
