Dig into simply seasoned pork chops served with al dente asparagus spears and cherry tomatoes, drizzled with zesty lemon juice.
Ingredients:
- 6 medium asparagus, spears
- 2 tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- ½ tbsp lemon juice
- 1 cup cherry tomato, halved
- 4 leaves basil, fresh
- 110g/3.9oz pork chop, raw

Instructions:
- Rub the pork chop with half of the olive oil, a pinch of salt, and ground black pepper.
- Preheat a grill or a grill pan to medium-high heat. Place the pork chop on the grill and cook for 5–6 minutes. Flip over and cook for an additional 5–6 minutes or until cooked through.
- Meanwhile, heat the remaining olive oil in a frying pan over medium heat. Add asparagus and fry for about 4–5 minutes, then add cherry tomatoes and fry for 2 minutes more.
- Assemble asparagus, cherry tomatoes, pork chop, and basil leaves on a plate. Drizzle with lemon juice and season with salt and ground black pepper. Enjoy!
