Poached Egg, Cauliflower, and Avocado Bowl Recipe

A poached egg with cauliflower and avocado bowl makes this one of the best plant-based keto meals to help boost your daily protein intake.

Ingredients: 

  • ½ medium cucumber, sliced
  • 1 medium avocado, sliced
  • 1½ tbsp olive oil
  • 3 medium eggs
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 pinch chili flakes
  • 6 leaves basil, fresh
  • 1 cup cauliflower, in florets

Instructions: 

  1. Bring a pot of water filled at least 2in/5cm deep to a simmer. Slowly crack the eggs into the simmering water. Cook for about 3–4 minutes. Lift the eggs out with a slotted spoon and drain them on a paper towel.
  2. Meanwhile, heat olive oil in a pan on medium heat. Add cauliflower florets, season with salt, ground black pepper, and chili flakes (optional), and stir-fry for 7–8 minutes or until tender and slightly golden.
  3. Add fried cauliflower, sliced cucumber, sliced avocado, and poached eggs in a serving bowl. Season with more salt and ground black pepper and garnish with basil leaves. Enjoy!

NOTE: Feel free to use frozen cauliflower.
