A poached egg with cauliflower and avocado bowl makes this one of the best plant-based keto meals to help boost your daily protein intake.
Ingredients:
- ½ medium cucumber, sliced
- 1 medium avocado, sliced
- 1½ tbsp olive oil
- 3 medium eggs
- 2 pinches salt
- 2 pinches ground black pepper
- 1 pinch chili flakes
- 6 leaves basil, fresh
- 1 cup cauliflower, in florets

Instructions:
- Bring a pot of water filled at least 2in/5cm deep to a simmer. Slowly crack the eggs into the simmering water. Cook for about 3–4 minutes. Lift the eggs out with a slotted spoon and drain them on a paper towel.
- Meanwhile, heat olive oil in a pan on medium heat. Add cauliflower florets, season with salt, ground black pepper, and chili flakes (optional), and stir-fry for 7–8 minutes or until tender and slightly golden.
- Add fried cauliflower, sliced cucumber, sliced avocado, and poached eggs in a serving bowl. Season with more salt and ground black pepper and garnish with basil leaves. Enjoy!
NOTE: Feel free to use frozen cauliflower.
