Peanut Tofu With Cauliflower Rice Recipe

Ingredients:

  • ½ cup chopped cauliflower
  • ½ cup tofu, cubed
  • 1 tsp olive oil
  • 2 tsp peanut butter
  • 1 tsp chopped fresh cilantro
  • 2 tsp sesame oil
  • 2 tsp tamari
  • 1 pinch chili powder
  • 1 tsp sesame seeds

Instructions:

  1. Drain off the excess liquid of the tofu and slice it into small cubes.
  2. In a bowl, mix together peanut butter, sesame oil, tamari, and chili powder (optional). Add tofu, toss to coat, and set aside.
  3. Place chopped cauliflower in a food processor and pulse until the mixture resembles rice. 
  4. Heat olive oil in a non-stick frying pan over medium heat. Add cauliflower rice and cook for 3–5 minutes, then remove and set aside.
  5. To the same pan, add tofu with peanut butter sauce and fry for 3–4 minutes on each side until crispy.
  6. Place crispy tofu cubes in a bowl. Sprinkle with sesame seeds and cilantro. Serve with cauliflower rice, and enjoy!

*NOTE: Feel free to use frozen vegetables.
