Oven-Baked Tofu With Tomatoes Recipe

A meat-free casserole that is quick and easy to prepare. Oven-baked tofu with tomatoes is low in carbs and full of rich tomato flavors.

Ingredients: 

  • 1½ tbsp olive oil 
  • ½ cup tofu, diced 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 2 pinches dried oregano 
  • 2 pinches dried basil
  • 2 pinches garlic powder 
  • ¾ cup canned tomatoes

Instructions: 

  1. Preheat the oven to 350°F/180°C.
  2. Combine the canned tomatoes with the dried oregano, dried basil, and garlic powder in a bowl and season to taste with salt and ground black pepper. Pour the sauce into the single-serving ovenproof dish.
  3. Chop the tofu into bite-sized pieces and immerse them in the sauce. Drizzle with olive oil and bake for 15–20 minutes.
  4. When ready, remove from the oven and enjoy!

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
