A meat-free casserole that is quick and easy to prepare. Oven-baked tofu with tomatoes is low in carbs and full of rich tomato flavors.
Ingredients:
- 1½ tbsp olive oil
- ½ cup tofu, diced
- 2 pinches salt
- 2 pinches ground black pepper
- 2 pinches dried oregano
- 2 pinches dried basil
- 2 pinches garlic powder
- ¾ cup canned tomatoes

Instructions:
- Preheat the oven to 350°F/180°C.
- Combine the canned tomatoes with the dried oregano, dried basil, and garlic powder in a bowl and season to taste with salt and ground black pepper. Pour the sauce into the single-serving ovenproof dish.
- Chop the tofu into bite-sized pieces and immerse them in the sauce. Drizzle with olive oil and bake for 15–20 minutes.
- When ready, remove from the oven and enjoy!
*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
