Omelet with Salmon and Tomatoes Recipe

It’s a match made in heaven. A rich and creamy omelet filled with tomatoes and topped with slices of smoked salmon. What more could you ask for in a low-carb breakfast?

Ingredients:

  • 2 medium eggs 
  • 1 tbsp olive oil 
  • 1 pinch salt 
  • 1 pinch ground black pepper 
  • 1 tbsp heavy cream, 36% fat 
  • ¼ small onion, chopped 
  • 1 clove garlic, minced 
  • ½ medium tomato, chopped 
  • 55g/2oz smoked salmon filet
  • 1 tbsp fresh parsley, chopped

Instructions: 

  1. Heat a frying pan with olive oil over medium heat. Add onion and garlic and saute for 2–3 minutes, stirring occasionally. 
  2. Meanwhile, in a mixing bowl, whisk the eggs with heavy cream, a pinch of salt, and ground black pepper. 
  3. Pour the egg mixture into the preheated frying pan. Cook for 3–4 minutes, covered with a pan lid, or until the egg mixture sets. Once cooked, add tomato and fold the omelet in half. 
  4. On a serving plate, serve the omelet with sliced salmon and top it with fresh parsley. Enjoy!
