Omelet With Feta and Spinach Recipe

Ingredients:

  • 1 cup spinach
  • ⅓ cup feta cheese, crumbled
  • 2 tsp olive oil
  • 2 medium eggs
  • 1 pinch ground black pepper
  • 1 tbsp fresh basil, chopped
  • ½ small bell pepper, chopped
  • 1 pinch salt
  • 2 tbsp scallions, chopped
  • 2 tbsp water

Instructions: 

  1. In a bowl, whisk the eggs with water, chopped scallions, basil, spinach, and bell pepper. Season with salt and ground black pepper.
  2. Heat the olive oil in a non-stick frying pan. Pour in the egg mixture. Stir slowly for the first minute, then turn the heat down to low, cover with a lid, and cook for 4 minutes letting the top almost set. Top with feta cheese and carefully fold the omelet in half and cook for an additional 2–3 minutes.
  3. Remove from heat and transfer to a plate. Enjoy!
