Start your day with a Greek-inspired breakfast. Spinach and feta is a classic combination for a reason and makes an excellent filling for your morning omelet.
Ingredients:
- 1 cup spinach
- ⅓ cup feta cheese, crumbled
- 2 tsp olive oil
- 2 medium eggs
- 1 pinch ground black pepper
- 1 tbsp fresh basil, chopped
- ½ small bell pepper, chopped
- 1 pinch salt
- 2 tbsp scallions, chopped
- 2 tbsp water

Instructions:
- In a bowl, whisk the eggs with water, chopped scallions, basil, spinach, and bell pepper. Season with salt and ground black pepper.
- Heat the olive oil in a non-stick frying pan. Pour in the egg mixture. Stir slowly for the first minute, then turn the heat down to low, cover with a lid, and cook for 4 minutes letting the top almost set. Top with feta cheese and carefully fold the omelet in half and cook for an additional 2–3 minutes.
- Remove from heat and transfer to a plate. Enjoy!
