Omelet With Cheese and Spinach Recipe

Eggs are your best friend when you’re eating low-carb, and the combination of cheese and spinach means both amazing breakfast flavor and an amazing combination of vitamins and minerals. 

Ingredients:

  • 2 medium eggs
  • ⅓ cup cheddar cheese
  • 1 tbsp olive oil
  • 1 medium tomato, wedged
  • ½ cup spinach
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 sprig cilantro, fresh

Instructions: 

  1. Whisk eggs with 3 tablespoons of water until smooth and lightly frothy. Stir in half the grated cheddar cheese, salt, and ground black pepper.
  2. Heat the olive oil in a frying pan over medium heat. Pour in the egg mixture and let sit for a few minutes.
  3. Reduce the heat and continue to cook until the egg mixture is almost cooked through. Add the spinach. Fold the omelet and sprinkle it with the remaining cheddar cheese. Serve immediately with tomato and cilantro on the side. Enjoy!
