Omelet With Cheese and Asparagus Recipe

Made with asparagus and parmesan, this omelet provides the nutrients you need to stay full and energized until lunch.

Ingredients: 

  • 2 cloves garlic, minced
  • 4 medium spears asparagus
  • 3 tbsp parmesan cheese, grated
  • 2 tsp butter
  • 2 medium eggs
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 2 tbsp heavy cream, 36% fat
  • 1 pinch dried basil
  • 1 handful spinach

Instructions:

  1. Melt the butter in a pan over medium heat. Add the garlic and cook for 30 seconds. Then add asparagus and cook, stirring occasionally, for 1–2 minutes. Remove from the pan and set aside. 
  2. In a bowl, whisk the eggs with heavy cream, salt, basil, and ground black pepper. 
  3. Heat the same pan over medium-high heat. Pour the egg mixture and let it sit for a few minutes. Lower the heat and continue to cook until the egg mixture cooks through. 
  4. Top the omelet with cooked asparagus and parmesan cheese. Let it sit for 1 minute or until the cheese melts, and slide it onto a serving plate. 
  5. Serve with spinach, and enjoy!
