Ingredients: 

  • 1 cup lettuce, chopped 
  • 1 small bell pepper, chopped 
  • 5 tbsp feta cheese, crumbled 
  • 1½ tbsp olive oil 
  • 2 tbsp fresh scallions, chopped 
  • 3 medium eggs
  • 1 pinch salt 
  • 1 pinch ground black pepper 
  • 3 tbsp water

Instructions: 

  1. In a bowl, whisk together eggs with water, scallions, ground black pepper, and salt. Set aside.
  2. Heat the olive oil in a non-stick frying pan. Pour in the egg mixture. Stir slowly for the first minute, then reduce the heat to low, cover and cook for 4 minutes until the top is almost set. Carefully fold the omelet in half and cook for another 2–3 minutes. Remove from heat and transfer to a plate.
  3. Top omelet with bell pepper and feta cheese. Serve with lettuce. Enjoy!
