The saltiness of feta cheese, combined with the sweetness of bell peppers in this tasty breakfast dish, will tickle your taste buds and get your day off to a great start.

Ingredients:
- 1 cup lettuce, chopped
- 1 small bell pepper, chopped
- 5 tbsp feta cheese, crumbled
- 1½ tbsp olive oil
- 2 tbsp fresh scallions, chopped
- 3 medium eggs
- 1 pinch salt
- 1 pinch ground black pepper
- 3 tbsp water

Instructions:
- In a bowl, whisk together eggs with water, scallions, ground black pepper, and salt. Set aside.
- Heat the olive oil in a non-stick frying pan. Pour in the egg mixture. Stir slowly for the first minute, then reduce the heat to low, cover and cook for 4 minutes until the top is almost set. Carefully fold the omelet in half and cook for another 2–3 minutes. Remove from heat and transfer to a plate.
- Top omelet with bell pepper and feta cheese. Serve with lettuce. Enjoy!
