Ingredients: 

  • 2 tbsp walnuts, chopped
  • 1½ tbsp olive oil
  • 1 cup arugula leaves
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 5 medium, halved
  • ¾ cup whole-milk mozzarella cheese, cubes
  • 1 tsp lemon juice

Instructions: 

  1. Mix together olive oil, lemon juice, salt, and ground black pepper.
