Masala Tofu Scramble Recipe

Ingredients:

  • 1 block extra-firm tofu, pressed and crumbled 
  • 2 tablespoons avocado oil 
  • 1 tablespoon yellow onion, diced 
  • 1 bell pepper, diced 
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • Salt and ground black pepper, to taste 
  • 1/4 cup green beans, chopped
  • 1/4 cup diced tomatoes
  • 1 tablespoon cilantro, chopped

Instructions:

  1. Heat the avocado oil in a skillet over medium heat. 
  2. Add the crumbled tofu, onion, and bell pepper.
  3. Cook for 5 minutes, stirring occasionally. 
  4. Stir in the cumin, garam masala, salt and ground black pepper and cook for an additional 2 minutes. 
  5. Mix in the green beans and cook until heated through.
  6. Serve on a plate and garnish with cilantro.
