Lettuce Wraps With Peanuts Recipe

A delicious filling of seasoned chicken and veggies wrapped in a lettuce leaf. Just like a classic wrap but very low-carb.

Ingredients: 

  • 2 tbsp olive oil
  • 2 pinches ground black pepper
  • 2 tsp lime juice
  • 90g/3.2oz chicken breast, raw
  • 2 pinches salt
  • 3 medium radishes
  • 3 tbsp unsalted peanuts, chopped
  • 4 leaves lettuce

Instructions: 

  1. Rinse lettuce leaves and pat dry, being careful not to tear them. Set aside.
  2. Cut chicken into bite-sized pieces. Season with salt and ground black pepper.
  3. Heat 1 tbsp of olive oil in a frying pan over medium heat. Add the chicken pieces and cook for 8–10 minutes or until golden brown and no longer pink inside.
  4. Meanwhile, in a small bowl, mix lime juice, the remaining olive oil, salt, and ground black pepper. Set aside.
  5. Add sliced radishes, chopped peanuts, and fried chicken pieces into the lettuce leaves. Drizzle with the dressing. Enjoy! 

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
