Lettuce Wraps With Peanuts Recipe

Missing wraps on the keto diet? Lettuce wraps with chicken and peanuts are the best of both worlds.
A delicious filling of seasoned chicken and veggies wrapped in a lettuce leaf. Just like a classic wrap but very low-carb.
Ingredients:
- 2 tbsp olive oil
- 2 pinches ground black pepper
- 2 tsp lime juice
- 90g/3.2oz chicken breast, raw
- 2 pinches salt
- 3 medium radishes
- 3 tbsp unsalted peanuts, chopped
- 4 leaves lettuce
Prep time | Cooking time | Total time |

Instructions:
- Rinse lettuce leaves and pat dry, being careful not to tear them. Set aside.
- Cut chicken into bite-sized pieces. Season with salt and ground black pepper.
- Heat 1 tbsp of olive oil in a frying pan over medium heat. Add the chicken pieces and cook for 8–10 minutes or until golden brown and no longer pink inside.
- Meanwhile, in a small bowl, mix lime juice, the remaining olive oil, salt, and ground black pepper. Set aside.
- Add sliced radishes, chopped peanuts, and fried chicken pieces into the lettuce leaves. Drizzle with the dressing. Enjoy!
*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
