It’s a convenient and fresh way to eat tuna that brings you all the benefits in a short prep time and at a very low cost-per-serving.

Ingredients:

  • 1 tbsp red onion, chopped
  • 6 leaves of lettuce
  • ½ small cucumber, chopped
  • 1 medium avocado, chopped
  • 1½ tbsp olive oil
  • 115g/4oz tuna, canned in water
  • ½ small bell pepper, chopped
  • 1 pinch salt
  • 1 pinch ground black pepper
  • ½ tbsp lemon juice

Instructions: 

  1. In a bowl, mix together canned and drained tuna with chopped red onion, cucumber, bell pepper, avocado, and olive oil.
  2. Divide the mixture into the lettuce leaves.
  3. Season with salt and ground black pepper. Drizzle with lemon juice. Adjust the seasoning to taste, or use other favorite spices instead. Enjoy!
