Ingredients:
- 2 cups chicken or beef broth
- 1 tbsp olive oil
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 celery, chopped
- 1/4 onion, diced
- 1/4 cauliflower head, chopped
- 1/4 broccoli head, chopped
- 1/2 cup green beans, chopped
- 2 garlic cloves, minced
- 1/2 14.5oz/400g can of tomatoes
- 1/4 tbsp Italian seasoning
- 1/2 tsp smoked paprika
- Black pepper, to taste
- Salt, to taste
Instructions:
- Add oil to a pot on medium heat.
- Add onions, celery, and bell peppers and stir for 5 minutes.
- Add the rest of the vegetables and tomatoes, along with the broth.
- Add the seasoning and spices and mix.
- Once boiled, reduce to medium-low heat and simmer for 20 minutes.
