Ingredients:

  • 2 cups chicken or beef broth
  • 1 tbsp olive oil
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 celery, chopped
  • 1/4 onion, diced
  • 1/4 cauliflower head, chopped
  • 1/4 broccoli head, chopped
  • 1/2 cup green beans, chopped
  • 2 garlic cloves, minced
  • 1/2 14.5oz/400g can of tomatoes
  • 1/4 tbsp Italian seasoning
  • 1/2 tsp smoked paprika
  • Black pepper, to taste
  • Salt, to taste

Instructions:

  1. Add oil to a pot on medium heat.
  2. Add onions, celery, and bell peppers and stir for 5 minutes.
  3. Add the rest of the vegetables and tomatoes, along with the broth.
  4. Add the seasoning and spices and mix.
  5. Once boiled, reduce to medium-low heat and simmer for 20 minutes.
