To get the most flavor out of this recipe, oven-roasting the tomatoes and garlic is key. It’s a great way to make the flavor more concentrated.

Tip: It pairs well with zucchini noodles!

Ingredients:

  • 6 Roma tomatoes, cubed
  • 1 1/2 cup chicken broth
  • 2 tsp Herbs de Provence
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp heavy cream
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Preheat your oven to 400°F/200°C.
  2. Place the cubed tomatoes and garlic cloves on a baking sheet, and drizzle with oil. Leave them in the oven for 25 minutes.
  3. Once done, blend until smooth.
  4. Pour the blended mixture into a pot on medium heat and add chicken broth.
  5. Add the Herbs de Provence, salt, and black pepper to season.
  6. Let simmer for 15 minutes.
  7. Once done, add in your heavy cream.
