This low-carb lunch will be a hit, the oven does most of the work!
To get the most flavor out of this recipe, oven-roasting the tomatoes and garlic is key. It’s a great way to make the flavor more concentrated.
Tip: It pairs well with zucchini noodles!

Ingredients:
- 6 Roma tomatoes, cubed
- 1 1/2 cup chicken broth
- 2 tsp Herbs de Provence
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp heavy cream
- Salt, to taste
- Black pepper, to taste
Instructions:
- Preheat your oven to 400°F/200°C.
- Place the cubed tomatoes and garlic cloves on a baking sheet, and drizzle with oil. Leave them in the oven for 25 minutes.
- Once done, blend until smooth.
- Pour the blended mixture into a pot on medium heat and add chicken broth.
- Add the Herbs de Provence, salt, and black pepper to season.
- Let simmer for 15 minutes.
- Once done, add in your heavy cream.
