Ingredients:

  • 1½ tbsp olive oil
  • ⅓ cup canned tomatoes, chopped
  • 1 clove minced garlic
  • ⅔ cup tofu, cubed
  • 1 pinch ground cinnamon
  • 1 pinch ground ginger
  • 1 pinch dried ground cilantro
  • 1 pinch curry powder, without added salt
  • 1 tbsp fresh chopped parsley
  • ⅓ cup water
  • 1 pinch salt

Instructions:

  1. In a blender, combine canned tomatoes, water, garlic, salt, ground cinnamon, ground ginger, cilantro, and curry powder. Feel free to adjust the seasoning to taste. Blend until smooth and set aside.
  2. Drain off the excess liquid of the tofu and slice it into small cubes.
  3. Heat olive oil in a medium saucepan over medium heat. Add tofu and cook until crispy and golden brown.
  4. Then pour the tomato mixture into the saucepan and simmer for 10–15 minutes until it thickens.
  5. Serve in a bowl garnished with fresh parsley. Enjoy!
