Craving a warm and satisfying low-carb meal that's rich in flavor and aroma? This creamy tofu curry is exactly what you need.
Ingredients:
- 1½ tbsp olive oil
- ⅓ cup canned tomatoes, chopped
- 1 clove minced garlic
- ⅔ cup tofu, cubed
- 1 pinch ground cinnamon
- 1 pinch ground ginger
- 1 pinch dried ground cilantro
- 1 pinch curry powder, without added salt
- 1 tbsp fresh chopped parsley
- ⅓ cup water
- 1 pinch salt

Instructions:
- In a blender, combine canned tomatoes, water, garlic, salt, ground cinnamon, ground ginger, cilantro, and curry powder. Feel free to adjust the seasoning to taste. Blend until smooth and set aside.
- Drain off the excess liquid of the tofu and slice it into small cubes.
- Heat olive oil in a medium saucepan over medium heat. Add tofu and cook until crispy and golden brown.
- Then pour the tomato mixture into the saucepan and simmer for 10–15 minutes until it thickens.
- Serve in a bowl garnished with fresh parsley. Enjoy!
