Ingredients:

  • 4oz/115g shrimp, peeled and deveined
  • 1 avocado, diced
  • 4 cherry tomatoes, halved
  • 1 tsp cilantro, chopped
  • 1 tsp fresh parsley, chopped
  • ¼ tbsp avocado oil
  • ¼ small red onion, chopped
  • ½ lime, squeezed
  • ¼ tsp cayenne pepper
  • Salt, to taste
  • Black pepper, to taste

How to prepare:

  1. Season your shrimp lightly with salt, cayenne pepper, and black pepper.
  2. Heat avocado oil in a skillet over medium-high heat.

  4. Combine the shrimp, herbs, onions, tomatoes, and avocado.
  5. Season with salt and black pepper. Squeeze a lime over it.
