Ingredients:
- 4oz/115g shrimp, peeled and deveined
- 1 avocado, diced
- 4 cherry tomatoes, halved
- 1 tsp cilantro, chopped
- 1 tsp fresh parsley, chopped
- ¼ tbsp avocado oil
- ¼ small red onion, chopped
- ½ lime, squeezed
- ¼ tsp cayenne pepper
- Salt, to taste
- Black pepper, to taste

How to prepare:
- Season your shrimp lightly with salt, cayenne pepper, and black pepper.
- Heat avocado oil in a skillet over medium-high heat.
- Add the seasoned shrimp and cook for 2 minutes on each side. Then, set aside.
- Combine the shrimp, herbs, onions, tomatoes, and avocado.
- Season with salt and black pepper. Squeeze a lime over it.
- Serve immediately or in meal prep containers.
