Who said you couldn’t enjoy pancakes on keto?
Pancakes made from keto ingredients are not any worse than the traditional ones. By topping them with cream cheese, berries, or sugar-free syrup you can make them one of your favorite breakfast options.
Ingredients:
- 1 cup almond flour
- 1 cup coconut flour
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp xanthan gum (or 2 eggs)
- 1 cup unsweetened milk, almond or coconut
- 3 tbsp butter, melted
- 1 tbsp liquid stevia
- 1 tsp vanilla extract
- Toppings: Consider fresh berries, sugar-free syrup, or cream cheese essential toppings for keto pancake recipes.

How to prepare:
- Whisk together the dry ingredients: flour, coconut flour, baking powder, salt, and xanthan gum.
- In a separate bowl, whisk together the wet ingredients: milk (almond or coconut), melted butter, stevia, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until everything is well combined. If the batter is too thick, add more milk until it reaches your desired consistency.
- Heat a frying pan over medium heat and grease with butter or cooking spray.
- Scoop ¼ cup of batter onto the frying pan for each pancake. Cook for 2–3 minutes per side or until golden brown and cooked through.
- Decorate with cream cheese, berries, and sugar-free syrup.
- Serve your morning meal immediately.
