Keto Meatloaf Casserole Recipe

Ingredients: 

  • 1 small egg
  • ¼ cup almond flour
  • 2 tbsp chopped onion
  • 1 clove garlic, minced or crushed
  • Salt and pepper to taste
  • 1lb/450g ground beef
  • 1 tsp dried thyme, oregano, or mixed herbs
  • ¼ cup parmesan cheese, grated
  • 2–3 tbsp keto-friendly tomato ketchup

Instructions:

  1. Lightly beat the egg. Mix in the almond flour, onion, garlic, salt, pepper, beef, herbs, and cheese.
  2. Stir till the mixture is smooth. 
  3. Line a loaf tin or casserole dish with parchment. 
  4. Shape the mix accordingly and place it in a baking dish. 
  5. Bake in a preheated 350⁰F/180⁰C oven for 30 minutes. 
  6. Remove from the oven and spoon the ketchup on top.
  7. Bake for a further 30 minutes or till cooked through. 
  8. Once done, rest outside for 10–15 minutes before cutting.
