Keto Egg Salad With Bacon Recipe

This is one of our favorite keto lunch prep ideas for work. Leave it in the fridge overnight until ready to eat.

Ingredients:

  • 2 hard-boiled eggs, peeled and chopped
  • 1 slice bacon
  • 3–4 cherry tomatoes, halved
  • 1 tbsp chopped green onions
  • 2 tbsp salad greens, chopped (use any available) 
  • 1 tbsp mayonnaise
  • ¼ tsp mustard
  • 1 tsp full-fat sour cream
  • Salt and pepper

Instructions: 

  1. In a salad bowl, put in the eggs, chopped bacon, tomatoes, onions, and salad greens.
  2. Mix together the mayonnaise, mustard, sour cream, salt, and pepper and spoon over the salad. 
  3. Toss to combine and dig in.
