This is one of our favorite keto lunch prep ideas for work. Leave it in the fridge overnight until ready to eat.
Ingredients:
- 2 hard-boiled eggs, peeled and chopped
- 1 slice bacon
- 3–4 cherry tomatoes, halved
- 1 tbsp chopped green onions
- 2 tbsp salad greens, chopped (use any available)
- 1 tbsp mayonnaise
- ¼ tsp mustard
- 1 tsp full-fat sour cream
- Salt and pepper

Instructions:
- In a salad bowl, put in the eggs, chopped bacon, tomatoes, onions, and salad greens.
- Mix together the mayonnaise, mustard, sour cream, salt, and pepper and spoon over the salad.
- Toss to combine and dig in.
