It may take some time to prepare, but it makes for a delicious low-carb lunch option, especially when made in advance for meal prep. It can also be made in large quantities for serving at a gathering with friends.

Ingredients:

  • 1lb/450g ground beef
  • 1/4 onion, chopped
  • 1 tbsp olive or avocado oil
  • 1 garlic clove, grated
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 14.5oz/400g can of diced tomatoes
  • 1 1/2 tbsp tomato paste
  • 1 cup beef stock
  • 1/2 tsp salt
  • 1/2 tbsp taco seasoning
  • Chili powder to taste
  • Shredded cheese

Instructions:

  1. Pour oil into a pot on medium heat. Add onions, bell peppers, and garlic, and leave for 2 minutes.
  2. Set to high heat and add beef. Break clumps and allow the beef to brown.
  3. Add the diced tomatoes, tomato paste, stock, salt, chili powder, and taco seasoning. Stir well.
  4. Allow it to boil before dropping it to low heat. Simmer for an hour until thickened.
  5. Serve in a bowl with shredded cheese.
