Ingredients:

  • 2 chicken breasts, skinless, boneless, cubed
  • 6 cups chicken broth
  • 1/4 onion, chopped
  • 1 celery, chopped
  • 4 garlic cloves, minced
  • 1 small cauliflower, finely chopped
  • 2 bay leaves
  • 1 tsp chili flakes
  • 1/2 tsp ginger powder
  • 1 tbsp avocado oil
  • Salt, to taste

Instructions:

  1. Add avocado oil to a saucepan over medium heat. Add garlic and onion and fry until it starts to brown.
  2. Add cauliflower to the pot and leave for about 10 minutes.
  3. Add chicken broth, celery, chili flakes, ginger powder, and bay leaves, and allow to simmer.
  4. Put in cubed chicken breasts and let the soup cook for 20 minutes.
  5. Season with salt as needed.
