Ingredients:
- 2 chicken breasts, skinless, boneless, cubed
- 6 cups chicken broth
- 1/4 onion, chopped
- 1 celery, chopped
- 4 garlic cloves, minced
- 1 small cauliflower, finely chopped
- 2 bay leaves
- 1 tsp chili flakes
- 1/2 tsp ginger powder
- 1 tbsp avocado oil
- Salt, to taste
Instructions:
- Add avocado oil to a saucepan over medium heat. Add garlic and onion and fry until it starts to brown.
- Add cauliflower to the pot and leave for about 10 minutes.
- Add chicken broth, celery, chili flakes, ginger powder, and bay leaves, and allow to simmer.
- Put in cubed chicken breasts and let the soup cook for 20 minutes.
- Season with salt as needed.
