Keto Chicken Cucumber Avocado Salad Recipe

Ingredients:

  • ½ cup diced avocado
  • ½ cup diced cucumber
  • 4oz/115g chicken breast
  • 4–5 cherry tomatoes, halved
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped cilantro or parsley
  • ½ tablespoon apple cider vinegar or rice wine vinegar or lemon juice
  • 1½ tablespoon olive or avocado oil
  • Salt and pepper
  • Salad greens of choice, optional

Instructions:

  1. Heat a pan with 1 teaspoon of olive or avocado oil.
  2. Dry the chicken breast with paper towels and rub salt and pepper into it.
  3. Place the chicken on the pan and cook for 5 minutes on each side on medium/high heat.
  4. Put avocado, cucumber, tomato, onions, and cilantro in a bowl.
  5. Blend together the vinegar or lemon juice with oil and salt and pepper, whisking to make the dressing.
  6. Spoon over the salad and toss to mix well.
  7. Slice the cooked chicken and put it on top of the salad.
  8. This salad is low-carb, and you can have it on its own or pair it with another keto dish.
