Ingredients:
- ½ cup diced avocado
- ½ cup diced cucumber
- 4oz/115g chicken breast
- 4–5 cherry tomatoes, halved
- 2 tablespoons chopped green onions
- 1 tablespoon chopped cilantro or parsley
- ½ tablespoon apple cider vinegar or rice wine vinegar or lemon juice
- 1½ tablespoon olive or avocado oil
- Salt and pepper
- Salad greens of choice, optional

Instructions:
- Heat a pan with 1 teaspoon of olive or avocado oil.
- Dry the chicken breast with paper towels and rub salt and pepper into it.
- Place the chicken on the pan and cook for 5 minutes on each side on medium/high heat.
- Put avocado, cucumber, tomato, onions, and cilantro in a bowl.
- Blend together the vinegar or lemon juice with oil and salt and pepper, whisking to make the dressing.
- Spoon over the salad and toss to mix well.
- Slice the cooked chicken and put it on top of the salad.
- This salad is low-carb, and you can have it on its own or pair it with another keto dish.
