It’s got chicken, avocado, and cauliflowers for the perfect balance of healthy fats and proteins. Don’t forget the star of the meal – low-carb enchilada sauce. 

Ingredients:

  • 4oz/115g chicken breast
  • ½ cup cauliflower rice, cooked
  • ¼ cup low-carb enchilada sauce
  • ¼ cup water
  • ⅓ cup cheddar cheese, shredded
  • 1 tbsp avocado oil
  • ½ onion, chopped
  • 1 green chili, diced
  • ½ avocado, sliced
  • 1 tbsp cilantro, chopped
  • 1 tbsp sour cream
  • Salt, to taste

How to prepare:

  1. In a skillet, heat oil over medium heat. Add salted chicken breast and sear both sides until golden brown. Set aside.
  2. Add enchilada sauce and water to the skillet.
  3. Add green chilis and onions, cover, and simmer over low heat for 20 minutes.
  4. Shred the cooked chicken, and add it to the sauce.
  5. Pour the cauliflower rice into a bowl, and top it with the sauce and chicken.
  6. Sprinkle it with shredded cheese and put it in the microwave for a minute until the cheese melts.
  7. Serve with avocado, sour cream, and cilantro.
