Add a keto twist to this classic Mexican dish – chicken enchiladas!
It’s got chicken, avocado, and cauliflowers for the perfect balance of healthy fats and proteins. Don’t forget the star of the meal – low-carb enchilada sauce.
Ingredients:
- 4oz/115g chicken breast
- ½ cup cauliflower rice, cooked
- ¼ cup low-carb enchilada sauce
- ¼ cup water
- ⅓ cup cheddar cheese, shredded
- 1 tbsp avocado oil
- ½ onion, chopped
- 1 green chili, diced
- ½ avocado, sliced
- 1 tbsp cilantro, chopped
- 1 tbsp sour cream
- Salt, to taste

How to prepare:
- In a skillet, heat oil over medium heat. Add salted chicken breast and sear both sides until golden brown. Set aside.
- Add enchilada sauce and water to the skillet.
- Add green chilis and onions, cover, and simmer over low heat for 20 minutes.
- Shred the cooked chicken, and add it to the sauce.
- Pour the cauliflower rice into a bowl, and top it with the sauce and chicken.
- Sprinkle it with shredded cheese and put it in the microwave for a minute until the cheese melts.
- Serve with avocado, sour cream, and cilantro.
