This chicken chili recipe is perfect for your spicy meal cravings.

Ingredients for 4 servings:

  • 16oz/450g chicken strips
  • 1 cup chicken stock
  • 8oz/225g tomatoes, crushed
  • 1 tbsp butter
  • 4 jalapenos, diced
  • 2 green chili, diced
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tsp onion powder
  • ½ tsp garlic powder
  • 1 tbsp chili powder
  • Cream cheese
  • Salt, to taste

How to prepare:

  1. Saute garlic, onions, and peppers with butter in an instant pot for 5 minutes.
  2. Add the chicken strips, chicken stock, crushed tomatoes, and spices.
  3. Cover the instant pot, then set the timer for 20 minutes. Shred the chicken once done.
  4. Add cream cheese to the chili and stir it well.
  5. Add the shredded chicken back to the chili mixture and allow to simmer for 10 minutes.
  6. Serve with any keto-friendly toppings of your choice. Shredded cheese and low-carb tortillas can make this one of the best keto lunch recipes for weight loss.
