This chicken chili recipe is perfect for your spicy meal cravings.
Ingredients for 4 servings:
- 16oz/450g chicken strips
- 1 cup chicken stock
- 8oz/225g tomatoes, crushed
- 1 tbsp butter
- 4 jalapenos, diced
- 2 green chili, diced
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 tsp cumin
- 1 tsp oregano
- 2 tsp onion powder
- ½ tsp garlic powder
- 1 tbsp chili powder
- Cream cheese
- Salt, to taste

How to prepare:
- Saute garlic, onions, and peppers with butter in an instant pot for 5 minutes.
- Add the chicken strips, chicken stock, crushed tomatoes, and spices.
- Cover the instant pot, then set the timer for 20 minutes. Shred the chicken once done.
- Add cream cheese to the chili and stir it well.
- Add the shredded chicken back to the chili mixture and allow to simmer for 10 minutes.
- Serve with any keto-friendly toppings of your choice. Shredded cheese and low-carb tortillas can make this one of the best keto lunch recipes for weight loss.
