Ingredients:

For the salad:

  • 1/2 head of Romaine lettuce, chopped
  • 1 chicken breast
  • 2 hard-boiled eggs
  • 1/4 cup parmesan cheese, grated
  • 6 bacon strips

For the dressing:

  • 1/2 cup mayonnaise
  • 1/2 lemon, squeezed
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Add eggs to a pot of boiling water for 10 minutes. Peel and slice in two once done.
  2. Rub the chicken breast with a little olive oil and season with salt and pepper to taste. 
  3. Place the pan over medium heat until hot, and cook the chicken for 5 minutes on each side. 
  4. Cook your bacon until crispy. Break it into small pieces once done.
  5. Chop the Romaine lettuce and set it as the base in a bowl.
  6. Evenly spread the bacon bits and parmesan over the lettuce, and place the eggs and sliced chicken after.
  7. Mix all the dressing ingredients thoroughly in a single bowl. Spread over the salad, and toss gently.
